Takeaway is here to stay. During the turn of the millennium, there has been an increase in demand for ready-to-collect lunches and dinners. The restaurant market has increased dramatically, and the rise of take-out is partly to blame for this phenomenon. And the kicker is that… takeaways do not just mean pizza or cheap assortments in plastic boxes. There is a wide range of possibilities in this market. From the traditional fish and chips to expensive sushi cuts, and even wagyu burgers.

And it may come as no surprise that the pandemic has propelled demand into a new stratosphere. The pandemic has allowed companies like Deliveroo and Uber Eats to sell 900.000 more meals through their apps. Just Eat, the food delivery company, reported a 76% increase in orders through their platform during the first half of 2021.

The increased demand has led to the development of a new food retail model, the dark kitchen.

   

The rise of dark kitchens

Dark kitchens are locations in which staff or small groups can set up to provide the most effective takeout meals. Similar to the Domino’s Pizza model, these companies do not have a physical restaurant location. However, due to the surge in demand for food delivery all over the country, some of these companies don't even use their location for you to pick up your order. These catering companies have the sole purpose of providing takeaways. And even though they have grown dramatically during the pandemic, their growth may not simply be a response to Covid. Deliveroo had promoted the idea of dark kitchens years before lockdowns were imposed.

   

Can I grow as a Takeaway food retailer?

Point One suggests that Takeaway is not only here to stay but that there could be seasonal upsurges during the colder months. Catering companies can benefit by efficiently optimising processes and staff. Currently, customers expect brands to have an advanced presence and to assist eateries even if they cannot visit the restaurant. This is where creating a delivery-only brand can be beneficial. A phantom kitchen is a characteristic response to the transition towards delivery since it allows established companies and start-ups to grow with a reduced level of resources.
