Rosecoco beans are also known by some as Borlotti beans and are a traditional favourite for Italians. There is a beautiful variety similar to the kidney bean that is pinkish with brown streaks. There is a smooth, creamy texture along with a sweet, nutty flavour. This bean is as happy in simple salads as it is in Minestrone Soup. The flavours of Italy go well with toasted bread drizzled with olive oil, fresh basil, and a drizzle of olive oil. They are filling and work well in spicy dishes.
